Ingredients:
For a 3 bone short rib (approximately 5 lbs)
- Herb bundle: rosemary, thyme, sage (2-3 sprigs each)
- Handful of Black peppercorns
- 1 bottle red wine (Cabernet is ideal), Something you like!
- 8 Garlic cloves peeled
- 2 Halved oranges
- 2 Halved shallots peeled
Zesty spice rub mix:
- Orange and Lemon Zest (1 tbsp each)
- Sugar (1/4 cup)
- Salt (1 tbsp)
- Pepper (1 tbsp)
- Garlic Powder (1 tsp)
- Onion Powder (1 tsp)
- Optional: Paprika or Smoked Paprika (1 tsp)
Instructions:
- Preheat the oven to 200°F.
- Combine the orange zest, lemon zest, sugar, salt, pepper, garlic powder, onion powder, and paprika in a bowl. Mix well. Best to rub zest and sugar together to release the oils before adding other ingredients.
- Rub the Caroland Farms Wagyu short ribs with the zesty spice rub, covering all sides of the meat, making sure it's really rubbed in well on the fat cap.
- Place the seasoned short ribs in a large Dutch Oven, with the fat facing upwards.
- Place the herb bundle in the Dutch oven.
- Pour the red wine in and put in all the other ingredients.
- Cover the Dutch oven with a tight-fitting lid and place it in the preheated oven.
- Cook low and slow for 8 hours.
- Turn the heat up to 350°F, and cook for an additional 2.5 hours.
- Internal temperature should read 200°F-205°F.
