Beautiful striated eye of round. Smoked at 225 degrees,pulled at 120. Rested 1 hour. Sliced super thin. Served on a toasted cibatta bun with melted Swiss. Piled high topped with red onion and horseradish sauce. Outstanding! 1/4 cup mayo,3T horseradish,2T sour cream and 1t mustard powder! Trust me
Absolutely delicious, a little salt & pepper 4 minutes per side in a cast iron pan until a crust formed then lowered heat until temperature read 125F then let it sit for about 5 minutes and was a perfect med-rare.
Best steaks I have ever grilled - melt in your mouth delicious! Do yourself a favor and get you some!
