The owners are fantastic! The suet used to make tallow was top notch and I will definitely be returning. If you go in person to the barn for the first time, I would call them first as there is no store front and it’s a little confusing as there are no signs to direct you into the farm.

The whole bavette flap is a no brainer. Grilled a little to rare on the gas grill finished in the iron skillet. Salt and pepper only. Tortillas. Cheddar cheese with a chipotle aioli sauce. Tip top great flavor of the beef here folks. Glad I bought two. You will too
There was a lot of silver skin that I needed to trim. The flavor and quality of the meat was good. I’ve heard that this particular cut of beef is tricky for butchers to master well.
